Sparkle
Mondays can be pretty slow in the small town of Montignoso, Italy. After the busy weekend, clients have left to return to their homes, making Monday service completely minimal. Tonight we had no one for dinner so we designated it as cleaning night. This is no easy task, hard manual labor is required and it's a dirty job. We organized the walk-in (refrigerator), the reach-in, spice shelves, cabinets, cheese drawer, charcuterie fridge that contains the gorgeous salamis, pancetta, and Colonatta lardo. Then we wiped the counters, cleaned the stove, and swept and washed the floors. We were on our hands and knees washing away. It took over 4 hours for us to finish, but we finally got it done, and now the kitchen sparkles!
