Sweet Stuff
Today we finished making gelato. I'm shocked as to how simple it is to make. This version is more similar to American sorbet than ice cream. We began yesterday by making a simple syrup (1 liter of water with 1 liter of sugar over high heat until dissolved). Then we cut up cantaloupe and filled a 1 liter container 3/4 of the way. You can actually use any fruit, we made a apricot flavor as well, just use what you have on hand. Once the simple syrup has cooled you fill the container until all the fruit is well covered. Freeze over night.
Today we finished the gelato by putting it into the Pacojet. This machine is able to puree deep frozen foods into a creamy mixture. It's amazing! No dairy added and it's done in minutes. The flavor of the fruit is well preserved. It's absolutely delicious!
